A self-guided day is the other product, and most hire shops are already in it without calling it that. The guest paid for a bike. They still ask where to go. Someone at the counter answers, quickly, differently every time, and then the guest is gone. Put that answer on the phone once. Your line, your stops, your photos. Every hire can take it, not only the 9am departure that had enough people to justify a guide. The bike comes back. The explanation does not have to be given again. If cycling is not the whole business A walking tour, a transfer, a hotel, an activity desk: you already know the shape.
